Spring Equinox Foraging: 5 wild finds to welcome the season

Today marks the Spring Equinox, the official arrival of spring, and nature is already beginning to show signs of new life. As daylight stretches and the hedgerows stir, now is the perfect time to head outdoors and see what wild edibles you can gather. Here are five of our favourite things to forage at this time of year:

1. Wild Garlic (Allium ursinum)A firm favourite among foragers, wild garlic carpets woodlands with its lush green leaves and delicate white flowers. Its garlicky aroma gives it away before you even spot it. Use the leaves in pestos, soups, or to infuse oils.
2. Cleavers (Galium aparine)Also known as sticky willy, cleavers are one of spring’s early risers. Traditionally used as a spring tonic, cleavers support the lymphatic system and make a refreshing cold infusion or can be blended into juices.
3. Nettles (Urtica dioica)Packed with iron and nutrients, young nettle tops are perfect for soups, teas, and pestos. Just remember to wear gloves when picking! Once cooked, the sting disappears, leaving a rich, earthy flavour.
4. Chickweed (Stellaria media)This delicate green grows low to the ground and can be found almost year-round, but it thrives in spring. Mild and slightly sweet, chickweed is ideal for adding to salads, pestos, or even as a fresh garnish.

5. Gorse Flowers (Ulex europaeus)Bright yellow and beautifully fragrant, gorse flowers add a subtle coconut aroma to teas, syrups, or infusions. Handle carefully – those spines are sharp! – and enjoy in moderation due to their alkaloid content.
