Recipe: Wild Garlic Pesto

Wild garlic is one of spring’s best foraged treasures, filling woodlands with its unmistakable aroma. This quick and easy wild garlic pesto recipe captures its fresh, garlicky flavour and brings a seasonal twist to a kitchen staple.
Ingredients:
100g wild garlic leaves (washed and roughly chopped)
50g parmesan cheese (grated)
50g toasted pine nuts or hazelnuts
150ml extra virgin olive oil
Juice of half a lemon
Salt and pepper to taste
Method:
Blend the wild garlic, nuts, and cheese in a food processor.
Slowly drizzle in the olive oil until smooth.
Stir in the lemon juice, season to taste, and store in a jar in the fridge.
Keep your pesto in the fridge and enjoy it stirred through pasta, dolloped on soups, or spread on crusty bread. It’s a simple way to make the most of wild garlic season and bring a taste of the hedgerow to your meals!
